Hop Schedule Basics
Boil additions, whirlpool, and dry hop — timing drives bitterness vs aroma.
Hops contribute bitterness, flavor, and aroma depending on when you add them.
Boil
Longer boil times (45–90 min) isomerize alpha acids → bitterness (IBU). Late additions (5–15 min) keep more volatile oils for flavor.
Whirlpool / hop stand
Post-boil additions at lower temperature emphasize aroma with limited bitterness.
Dry hop
Additions during or after fermentation add aroma without much IBU. YeastCoast excludes dry hop from IBU estimates.
When you fork a recipe, preserve the schedule times and amounts, then change one variable at a time so you can learn from the log.
